Who says comfort food has to kick you out of ketosis? This cheesy, spicy, hearty tamale casserole uses 3 lbs of ground turkey, melty cheese, and a homemade keto enchilada sauce that slaps.
🥘 Ingredients (12 servings)
Filling:
3 Tbsp olive oil
3 lbs ground turkey
1 yellow onion, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
Salt & pepper to taste
1 tsp cumin
1 tsp chili powder
1/2 tsp paprika
1/2 tsp oregano
1/2 tsp garlic powder
2 cups riced cauliflower or chopped zucchini (optional veggie boost)
1 1/2 cups shredded cheddar or Mexican cheese blend
1/2 cup sour cream
Homemade Keto Enchilada Sauce:
2 Tbsp olive oil
1/2 cup tomato puree (or reduce diced tomatoes into paste!)
1 1/2 cups chicken broth
2 Tbsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder
1/4 tsp onion powder
Salt to taste
Optional: pinch of xanthan gum for thickening
🔥 Instructions
Make the Sauce:
Simmer all sauce ingredients together for 10–15 mins. Thicken if needed. Taste and adjust seasoning!
Cook the Filling:
Sauté onion and peppers in olive oil. Add turkey and cook through. Season with all the spices. Add in zucchini or cauliflower (optional), cook until soft. Stir in sour cream, 1 cup of cheese, and 1/2 the enchilada sauce.
Assemble:
In a greased 9x13 baking dish, spread the turkey mixture. Pour remaining sauce over the top and sprinkle with the rest of the cheese.
Bake at 375°F for 20–25 mins or until bubbly and golden. Garnish with green onions, cilantro, or avocado slices!
